We are having snow flurries today; it certainly feels cold. Brrr!  Even though it was only 29° this morning how will it feel when it is 10°? Are we thankful enough for our good warm houses? I feel sorry for the folks that don’t have that blessing.

Christmas will soon be here and gone again.  It is a time of excitement, carolers, banquets, baking cookies, making candy, schoolteachers have programs with the pupils, family gatherings, etc.  All this will have no meaning if we forget the reason why we celebrate Christmas, God gave us the gift of His Son that we can be saved.  May we appreciate His gift all year long.

Wintertime is time to do projects inside such as:  Sewing, cleaning out neglected corners, trying new recipes, plus trying to come up with something new and different to break the monotony of being cooped up indoors. I started cutting leftover dress material into blocks to make a comfort top.

Here is a new energy ball recipe that looks good. I think I will try it. It is taken from “Cooking in the Nest” cookbook.

Date Pecan Energy Balls

1 cup oats

¼ cup pumpkin seeds

2 cups sticky medjool dates

¼ cup hemp seeds, optional

¼ teaspoon nutmeg

2-3 tablespoon water

1 cup pecans

¾ cup shredded coconut

1 cup raisins

1 teaspoon cinnamon

¼ teaspoon ginger

Place oats, pecans, seeds, and coconut in a food processor and process until mixed. Add pitted dates, raisins, and spices. Process until dough forms. Add 2-3 tablespoon water and process until dough gets sticky. The dough should stick together when forming into balls. Store energy balls in an airtight container in the refrigerator.
